The Center for Research on Ingredient Safety at Michigan State University is excited to highlight doctoral student, Loan Cao, for her first-place win in the 3-Minute Thesis Competition at the International Association for Food Protection (IAFP) annual meeting in Salt Lake City, Utah.

Loan’s winning presentation, “Relationship of arsenic and lead concentrations in soil and that in fruits and leaves of apple trees at selected orchards in Michigan,” focused on a portion of her dissertation research that investigates the relationship between the historical usage of lead arsenate at orchard sites, persisting lead and arsenic concentrations in the soil, and the amount of the two elements in plant tissues, fruit, and juice.

Loan’s in-depth training in the Environmental and Integrative Toxicological Sciences (EITS) Graduate Program, with Dr. Leslie Bourquin in Food Science and Human Nutrition, provided her with the direction she needed to pursue excellence.
