MSU Culinary Services and dietetics students win award

MSU Culinary Services, working with dietetics students in HNF 445, Foodservice Management Practicum, received an award from the National Association of College and University Food Services (NACUFS).

MSU Culinary Services, working with a group of dietetics students in HNF 445, Foodservice Management Practicum, received a bronze award in the residential dining special event category from the National Association of College and University Food Services (NACUFS).  The dietetics students planned and carried out the Beauty and the Beast themed event together with the culinary staff in Hubbard Hall in October 2017.  The full story was published this week in MSU Today: https://msutoday.msu.edu/news/2018/culinary-services-earns-national-recognition/

The dining area in Hubbard Hall was transformed into four distinct areas with themed menu items.  The Pub featured Gaston’s deviled eggs, braised pork shoulder and pumpkin fries.  The Town featured main items of beef bourguignon, cheese soufflé, bouillabaisse, confit duck cassoulet, and ratatouille, as well as MSU Dairy store cheeses, terrines and French bread.  The Castle featured a make-your-own crème brulée.

HNF 445 is taught by Diane Fischer, MS, RDN, Department of Food Science and Human Nutrition.

The “Be our Guest!” team of nine students included Kaitlin Allan, Megan Grattan, Chris Kargl, Nachuan Luo, Kara Sun, Deborah Walker, Wenyan Wang, Taylor Williams, and Linmeng Wu.
