Nurul is a visiting scholar from Universiti Putra Malaysia. Her work focuses on the use of a nonpathogenic bacterial strain as a Salmonella surrogate as a biological validation tool for thermal treatment of low-moisture foods including almond, black pepper, peanut butter, non-fat milk powder, wheat flour, and date paste. This work is a portion of a 4.7 million dollar USDA grant. The findings of this study will guide food manufacturers in performing effective risk assessment in order to reduce Salmonella outbreaks associated with low-moisture foods. Nurul will return to Malaysia to serve as a future lecturer in the Faculty of Food Science and Technology at Universiti Putra Malaysia, Malaysia.
