Cave ripened and aged for at least 12 months!
A washed curd, cave ripened cheese crafted in traditional Dutch fashion. This particular cheese is made with Milk from the Kellogg Biological Station (KBS) dairy herd. We only utilize milk from this farm when the cows (mostly Holstein and some Friesian) are entirely on pasture. Consequently, this gouda will have limited availability. Our Gouda is aged a minimum of one year before being made available for purchase. We have been especially pleased with the way KBS milk augments the flavor profile of our Gouda.
