Cheddar has a rich, creamy flavor that becomes increasingly sharp and complex with a smooth, firm texture that becomes more granular and crumbly as it ages. For golden Cheddar, milk is colored with a tasteless, odorless natural vegetable dye made from Annatto seeds. Sharp Cheddar is aged at least twelve months before packing.
