Carrot Pineapple Muffins

Ingredients
- 1 ½ cup whole wheat flour
- 1 ½ cup all purpose flour
- ½ cup sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 ½ teaspoon cinnamon
- 1 ½ cups carrot - grated
- 1 cup pureed pineapple
- 2 teaspoons vanilla
- 1/3 cup applesauce
- 3 eggs
- Cooking spray
Instructions
- Wash your hands for 30 seconds with hot water and soap.
- Sanitize all food prep surfaces and cooking utensils.
- Rinse and scrub all produce.
- In a large mixing bowl, mix together flours, sugar, salt, baking soda, and cinnamon.
- Add carrots, pineapple, vanilla, applesauce, and eggs. Mix together.
- Grease muffin tin.
- Fill muffin cups.
- Bake at 350 degrees for 20 minutes.
- Let cool and serve.
