Carrot Pineapple Muffins

Ingredients

  • 1 ½ cup whole wheat flour
  • 1 ½ cup all purpose flour
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • 1 ½ cups carrot - grated
  • 1 cup pureed pineapple
  • 2 teaspoons vanilla
  • 1/3 cup applesauce
  • 3 eggs
  • Cooking spray

Instructions

  1. Wash your hands for 30 seconds with hot water and soap.
  2. Sanitize all food prep surfaces and cooking utensils.
  3. Rinse and scrub all produce.
  4. In a large mixing bowl, mix together flours, sugar, salt, baking soda, and cinnamon.
  5. Add carrots, pineapple, vanilla, applesauce, and eggs. Mix together.
  6. Grease muffin tin.
  7. Fill muffin cups.
  8. Bake at 350 degrees for 20 minutes.
  9. Let cool and serve.
