Ingredients

  • 1 medium bell pepper (diced)
  • 1 small red onion (diced)
  • 2 (15½ ounce) cans black-eyed peas (drained and rinsed)
  • 1 (15¼ ounce) no salt added can corn kernels (drained and rinsed)
  • 3 Tablespoons canola oil
  • 2 Tablespoons vinegar
  • 1 teaspoon cumin
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper
  • Optional Ingredients:
  • ¼ cup fresh cilantro leaves (chopped)

Instructions

  1. Gather and prepare ingredients. 
  2. Add all ingredients to a large bowl.
  3. Mix well.
