“Harnessing Fungi and Microalgae in Cell-Cultivated Foods and Materials”

Abstract: Cells cultivated in bioreactors offer many possibilities for the production of novel and nutritious food products and new materials. Scientific and technological advances in cellular agriculture and processing technologies have allowed for the development of new techniques to utilize in vitro animal cells, plant cells, and microorganisms to mimic the organoleptic, nutritional, and textural properties of traditional foods and materials as well as to potentially develop entirely new product classes. This presentation will dive into the emerging field of cellular agriculture and discuss specific research projects from Dr. Barzee’s lab utilizing filamentous fungi, microalgae, animal cells, and 3D bioprinting in the production of structured food products and biomaterials.  

As a relatively new faculty member, Dr. Barzee will also devote a portion of the presentation to discussing his journey through academia and provide some advice to graduate students. 

Bio: Tyler Barzee is an Assistant Professor and leader of the Barzee Bioprocess Engineering and Fermentation Lab at the University of Kentucky. He obtained his BS in Biosystems Engineering from Clemson University and his MS and PhD in Biological Systems Engineering from the University of California Davis. His research lab focuses on the applications of microbiology and engineering to produce sustainable fuels, food ingredients, biomaterials, fertilizers, and other bioproducts. Current research projects focus on the production of novel foods with 3D bioprinting and fungal-assisted immobilization of microalgae, cultivation and processing of pure mycelium materials, anaerobic digestion of organic byproducts, and beverage fermentations. His lab utilizes life cycle assessment (LCA) and technoeconomic assessment (TEA) to look at the environmental impacts and economic feasibility of new bioprocesses.  

Dr. Barzee is also passionate about graduate student success and serves as faculty advisor to the BAE Graduate Student League of Students (BAEGLS) at the University of Kentucky.
