Iceberg Lettuce: Cooking series with SSG Sadler- Part 12a

Learn what you can make with some iceberg lettuce.

You’ve probably heard the name before, but what is Iceberg lettuce?  Where does the name come from?  Michigan State University Extension will answer these questions and leave you with a new recipe to share with your friends and family.

Lettuce has been around since early Egyptian times and was used in a variety of ways.  It is commonly used in salads, on sandwiches and in wraps.  There is no limit to the different ways that lettuce is used.  Lettuce is easy to wash, use and consume.  Iceberg lettuce gets its name from it being so crisp and crunchy.

Iceberg lettuce is filled with the beneficial vitamins A and C.  It is also rich in iron, calcium, fiber and potassium.  It has more nutritional value than most people believe it in fact does.  These vitamins and nutrients a very vital to the body and its daily functions. 

Keep yourself and your family healthy by preparing iceberg lettuce wraps. 

Iceberg Lettuce Wraps
Servings: 4

2 heads of iceberg lettuce
2 pounds of fresh boneless skinless chicken thighs
1 med red onion (chopped)
1 cup water chestnuts (chopped)
1 teaspoon fresh minced garlic

Sauce
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 teaspoon sesame oil
1/2 teaspoon granulated garlic
2 teaspoons red chile paste
1/4 tablespoon lemon juice

Directions

  1. Cut chicken into tiny pieces, season and place in a skillet on high heat.  Stir in the red onion and garlic; continue to stir until chicken is cooked.
  2. Mix in the chopped water chestnuts. 
  3. In a glass bowl combine all the ingredients for the sauce. Mix well.
  4. Take a leaf of iceberg lettuce and add chicken on top.  Add the sauce to the top of the chicken. 
  5. Enjoy
