Ingredients
- ½ cup onion (chopped)
- ½ pound ground beef (90% lean)
- 1 (14.5-ounce) can tomatoes
- 1 (6-ounce) can tomato paste (about 1 cup)
- 1 ½ cups water
- 2 cups egg noodles (dry)
- ¾ cup low-fat cottage cheese
- ¼ cup parmesan cheese (shredded)
- Optional Ingredients:
- 1 tablespoon fresh parsley
- 1 teaspoon garlic powder
Instructions
- Gather and prepare ingredients.
- Add the beef and onion to a pan over medium heat, cook until the beef is brown and onion is tender. Drain excess fat if necessary.
- Add the canned tomatoes, tomato paste, and water to the pan with the beef and onion. If using, add the garlic powder and fresh parsley.
- Add the dry egg noodles to the pan and stir until combined.
- Bring to a boil, cover, and simmer until sauce is thick and noodles are al dente. About 15 minutes.
- While the noodles are simmering, add the parmesan and cottage cheese to a small bowl and mix to combine.
- Place dollops of the cheese mixture into pan. Cover and heat over low heat until cheese melts. About 5 minutes.
