Juyun Lim is a professor of sensory science in the Department of Food Science and Technology at Oregon State University. She obtained her Ph.D. in Food Science from Cornell University and spent two years in the John B. Pierce Laboratory and Yale School of Medicine as a post-doctoral associate. The primary focus of her current research is to understand the sensory mechanisms that underlie oral carbohydrate sensing and its impact on insulin release. Her research also covers sensory testing methodology and sensory evaluation of foods. In 2012, Dr. Lim received the Moskowitz Jacobs Award for excellence in research on the psychophysics of human taste and smell from Association for Chemoreception Sciences. She also received Briskey Award for Faculty Excellence from Oregon State University.
