Background and Research Interests
Rachael obtained her Bachelor's degree in Food Science and Technology from Lilongwe University of Agriculture and Natural Resources (LUANAR) and a Master's degree in Food Science from Michigan State University. She is currently a PhD student in Food Science and Toxicology. Her research focuses on how different types of dietary fiber influence the composition and function of the gut microbiome. By studying microbial interactions, fermentation processes, and metabolic outputs, Rachael aims to uncover how fiber-rich diets support gut health, immune function, and overall well-being, with the goal of advancing dietary strategies that promote a healthier gut microbiome.
