Background and Research Interests

Rachael obtained her Bachelor’s degree in Food Science and Technology from Lilongwe University of Agriculture and Natural Resources (LUANAR) in Malawi, and worked as a food science laboratory technician at LUANAR until joining the FSHN Masters program in 2021. She completed her MS in Food Science at MSU FSHN in 2023. Her research focuses on comparing the effects of freeze drying, vacuum-oven drying and hot air drying on Vitamin A and C that is found in Mangoes and Orange Fleshed Sweet Potatoes. She is very interested in food processing and preservation.
