Background and Research Interests
Rachael obtained her Bachelor’s degree in Food Science and Technology from Lilongwe University of Agriculture and Natural Resources (LUANAR) in Malawi, and worked as a food science laboratory technician at LUANAR until joining the FSHN Masters program in 2021. Her research focuses on comparing the effects of freeze drying, vacuum-oven drying and hot air drying on Vitamin A and C that is found in Mangoes and Orange Fleshed Sweet Potatoes. She is very interested in food processing and preservation.
